Healthy Eating? What’s That?


My Poor Diet Led to Big Problems As a Kid…

I spent most of my childhood and young adult years struggling with my health. I battled severe allergies, asthma, spastic colon and irritable bowel syndrome (IBS) for as long as I could remember. I grew up sickly, weak and defeated. I was told not to over exert myself, take my medicines regularly and make the best of it.

At times I wasn’t allowed to play outside, for fear of my allergies and asthma “getting stirred up”. Needless to say, sports were out of the question. During my high school and college years I was in and out of the emergency room with complications from a spastic colon, irritable bowel syndrome and poor diet.

I married my high school sweetheart Barry (a musician) when I was 20 and the roller coaster began. We moved from our small town of Evansville, Indiana to Dallas, Texas. Three years later we moved to Los Angeles. I’ll spare you the “Jerry Springer details” but all that life on the road took its toll. We separated and I moved back to Indiana to live with my parents.
   
Hello Mom It’s Me Again! -
Back to the "Midwest Diet Plan"
Here I was, 24 years old - married for only 3 years…and I was moving back in with my parents.

I felt like a schmuck. But I had no other choice.


But my Mom didn’t treat me like a schmuck…she was wonderfully supportive (although she didn’t ‘sugar-coat’ her advice either…something I didn’t like at the time, but it proved later to be what I really needed to hear).
 
That’s when I began to eat again like I had been “raised”…

I Was Being Fattened Like the Christmas Goose
 
Wow. I forgot what it was like to eat my Mom’s cooking. My folks were hard-working blue-collar factory workers (they’re retired now). When I was a kid every meal had a piece of meat, usually fried (like country fried steak, fried pork chops or fried chicken), and 3 different starches (like corn, potatoes and bread) at every meal.
 
Salads or any types of greens were rare, and if we did have them, it was iceberg lettuce served with regular full-fat dressings. We drank regular (not diet) sodas with every meal.
 
In fact…still to this day…if we have a family potluck dinner with more ‘adventurous’ foods are being served – Mom will make a separate plate of steak and potatoes just for Dad. (Nope I’m not kidding).
 
Now Mom meant well, I know. And I’m also quite certain that I was “emotional eating”.
 
…But I gained 21 pounds in 3 months!
 
For The First Time in My Life I Was Getting Chubby

I had been the “skinny girl” all through High School, mainly because like a lot of teenagers – I just didn’t eat much.

So of course when Barry and I got married I didn’t have a clue how to prepare food. I just did what a lot of young newlywed women do – I went to the grocery store and bought anything that looked good and was easy to cook!

In the first years of our marriage we ate Hamburger Helper and Lipton “Quick Rice Meals” about 3 times a week! The other nights we went out to eat if we could afford it.

In fact, in the first 6 months of our marriage, Barry gained 23 pounds.

But I had never really gained much weight in the first years of our marriage - that is until I moved back in with Mom and Dad.
We Get Back Together and He Says “Wow…You Look…uh…Different...”


After being separated for 5 months and living 2000 miles away from each other, Barry and I started talking again. We realized that neither of us wanted a divorce and we needed to give our marriage another chance.

We planned for me to move back to L.A. as soon as possible. I was so excited…and Barry was too. The big day came. And I’ll never forget the look in his eyes when I first got off the plane.

He was looking at a woman that looked like the wife he remembered…only FATTER.

He confirmed it later on when he commented “You look…uh…different…” Of course, he wouldn’t come right out and say it (we were trying to get started on the RIGHT track, you know), but I knew exactly what he meant.

And That’s When a Santa Monica Bakery Taught Me the Lesson That Changed My Life FOREVER

We were starting a new life. So I decided to ditch my stable “office” job and do something that I thought would bring me happiness…a job I might actually like getting up and going to.

For some reason, an open position as a baker caught my eye. It just sounded fun for some reason (boy did I have rude awakening in store for me there!) Little did I know what kind of baker this ad was searching for…

Much to my surprise, in the interview I learned that the position required me to bake…using NO animal ingredients of ANY type.

It was a vegan bakery. Heck, I didn’t even know what a vegan was..?

Vegans don’t eat any sort of animal-based products. No dairy. No fish. Not even honey (it’s considered bee ‘slave labor’, you know…No, I’m not kidding).

But even though I had no baking experience and didn’t know the first thing about vegetarian diets, for some reason they hired me.

She Hires Me…And Then She Hands Me a Stack of Books

“Uh…what’s all this?” I asked, overwhelmed.

“That’s your homework” says my new boss, smiling. “The people who eat here are very health-conscious, and in order to know what in the world they’re talking about, you’ll need to study these”.

I wondered what I had just gotten myself into. But, at the same time I found myself excited about my new career as a “vegan baker”…so I dove into my “homework.”

I never knew these books existed…”Macrobiotics…The Pritikin Plan…The Zone Diet…” And who were these health nuts? These “vegans”…”lacto-ovo vegetarians”…”raw food dieters”?
What Martin Sheen, Winona Ryder and Woody Harrelson Taught Me About Healthy Eating
As I began my work as a vegan baker, a whole new world was opened to me. I was making these exotic breads, cakes & other desserts using ingredients I had never heard of; arrowroot, seitan, barley malt, quinoa. To my surprise, the food tasted wonderful. (Sure, it wasn’t the mile-high lemon meringue pie like my grandma used to make, but for something that was actually good for you – it was awesome)!

The bakery was actually part of a larger restaurant that only served vegan dishes. To make some extra money, I decided to wait tables in the restaurant when I wasn’t baking. This was an eye-opening experience – and somewhat of a thrill, too…because many of the patrons of this restaurant were celebrities!

I had the chance to wait on Martin Sheen, Charlie Sheen, Emelio Estevez & Family, Elizabeth Shue, Woody Harrelson, Ted Danson, Flea (from the Red Hot Chili Peppers), Beck (rock star) and Winona Ryder. Needless to say, for a wide-eyed girl from Indiana, taking a food order from a celebrity was a little nerve-racking but really exciting. I used to call Barry during my breaks and brag about who I had waited on!

The regular customers (and the celebrities) were very particular about their food and they knew just what they wanted most of the time. After a while I started to notice that all of these celebrities and most of the other patrons of the restaurant had one thing in common…

None of them were overweight.

One day I got SICK AND TIRED of being SICK AND TIRED.

Being surrounded by all these “healthy” people made me realize one thing…

I had to take control of my life and my health!

I studied food and how it affected my body. I started to make healthier choices and I was blown over by the way I started to feel. I had energy, felt great and best of all my IBS and “tummy problems” just disappeared! I felt so good that I even started to exercise.

Me? Exercise? WOW!

It wasn’t easy and I had to crawl before I could walk - BUT I DID IT! The girl who couldn’t even run in gym class or do a single pull-up was jogging daily and lifting weights. I couldn’t believe how my body was transforming before my eyes. I went from being the newly frumpy, sickly girl…to a fit, new improved version of me.

The thing that amazed me the most was that my allergies even improved, anyone suffers from them knows how big of a statement that is! I took control of my health, which eventually helped me focus more on my marriage (now 15 years and stronger than ever), dive deeper in my faith, gain self-confidence and reach true happiness.

And I can proudly say that I never succumbed to any of those slick ads weightloss-diet products. Never once have I used a prescription or non-prescription diet pill!

I went on to become a Nationally Certified Personal Trainer, Fitness Instructor and Lifestyle & Weight Management Consultant.

Well, 11 years and 2 kids later I’m still at it. I am allergy, asthma, spastic colon and IBS FREE! I am in the best shape ever and dedicate my life to helping others feel better and look better than ever before.
